Chikuzen-ni is a traditional New Year’s dish of simmered chicken and vegetables.
This New Year’s food has been the biggest part of New Year's celebration.
Simple Cooking
The ingredients are first sautéd together in oil. Bring Dashi, Shiitake flavored broth, and Mirin (sweet rice seasoning) to a simmer and let the Chicken cook in the mixture. Then, add Satoimo (taro roots), dried Shiitake Mushrooms, Konjac (yam cake), Burdock Root, Lotus Root, and Carrots, and cook until the vegetables are tender. Sometimes, Snap Peas are added after the vegetables are completely cooked. Enjoy!

Ingredients:
7 Dried Shiitake Mushrooms
1 Cup Water (For rehydrating Mushrooms)
1 Lotus Root (Renkon)
1/2 Burdock Root (Gobo)
1/2 Boiled Bamboo Shoot
1 Carrot
12 Snow Peas
6 Taro (Satoimo)
1 LB Boneless Chicken
1 Tbsp Sake (For Chicken Marinade)
1 Tbsp Soy Sauce
1 1/2 Tbsp Rice Vinegar (For Soaking Burdock & Lotus Root)
1 Tbsp Sesame Oil
1/2 Block Konjac
Seasonings:
1/2 Tspn Salt
1 Tbsp Sugar
3 Tbsp Mirin
3 Tbsp Sake
3 Tbsp Soy Sauce
2 Cups Dashi
Instructions:
- Gather All Ingredients
- Soak Shiitake Mushrooms (30 Mins)
- Squeeze Shiitake and Make Shiitake Dashi
- Cut into 1 1/2 inch Pieces 4cm
- Add 1 Tbsp Sake & 1 Tbsp Soy Sauce (Marinade)
- Scrape off skin of Burdock Root rinse and cut into slices
- Slice Lotus Root
- Place Burdock & Lotus Root in 11/2 Tbsp Rice Vinegar with 2 cups Water
- Cut Carrot & Snow Peas after removing Snow Peas Stems
- Blanch Carrots & Snow Peas in Water with a Pinch of Salt (3Mins)
- Cut Konjac in small 3cm pieces and Blanch in same water (heated 3mins) after removing carrots and Snow peas
- Heat 1 Tbsp Sesame Oil & Brown Chicken
- Heat 1/2 Tbsp Sesame Oil and sauté Veggies
- Add Dashi & Shiitake Dashi & Boil Veggies for (10Mins) then Add Chicken and Boil (5Mins)
